Strawberry Rhubarb Crème Pâtissière Shortcake : Part 3

The grain-free Shortcake:

If you’ve been following along, this is the third part of a How To make strawberry rhubarb shortcake filled with Crème Pâtissière, from scratch.

Ingredients:

1.5 cups of ground pecans.
1 cup of unsweetened desiccated coconut (medium shred).
1/2 lb of cold butter, cut into 6 cubes.
2 egg whites (Use up the whites (left-over) from making the Crème.)
1/2 cup of maple syrup.
A pinch of Himalayan salt.

1 cup of sliced fresh strawberries.
1/2 cup of fresh blueberries.

(The berries will be used for decorating.)

Directions

Grind the pecans in a high powered blender or food processor.

This is the level of crumb you will want to achieve.

Preheat the oven to 350 degrees F.

Using a food processor, blend the ground pecans and coconut with the butter, egg whites, maple syrup and salt. Blend well to form a sticky batter.

Line an 8x12 inch baking sheet with parchment paper.

Flatten the dough on the baking sheet. (It should be approximately 1/2 an inch thick and covering the whole sheet.)

Bake for 20 minutes. The shortcake should be golden brown. Let it cool completely on a cooling rack.

Once cooled, cut it into 2 squares (4x6 inches in size, each).

Now, we will take all the components, from the 3 recipes and start stacking!

The burning question: ***Will my bastardized version of Crème Pâtissière be firm enough to hold up the compote pecan shortcake and pile of berries ?

Start with a square of shortcake.

Spread a thick layer of Crème Pâtissière on top of it and strawberry rhubarb compote on top of that.

Cover that with the second piece of shortcake and spread another layer of Crème Pâtissière on top of it.

Decorate the top with fresh berries.
