Kashmiri Mango Pickle

Ingredient

Green mango = 2 kg, sugar = half kilogram, Grated ginger = One tablespoon ,Vinegar = two cups, Dried pepper = two tablespoons, salt = As per quantity, black cumin = one teaspoon, Red chilli powder = one teaspoon, and water = As per quantity.

How to make

In the beginning, we had to cut the mangoes and we would have to intersect with a thorn spoon on top of mango. The mangoes have to be cut and washed and will be dry in the sun whole day. It is good to give little salt when dry. Then mango must be boiled in a little water. Chopped chillies will be cut out in small pieces. For making sugar water, we need to add sugar and water to a pan and switch on the stove.

After the preparation of the sugar water, I used to give mango in sugar water. After 2 minutes, I give grated ginger, dried chilly, black cumin, dried pepper powder, vinegar and cover the pot with lid. It is very important to stir quickly so that it does not get stuck in the pan. If the sugar water becomes dense, switch off the stove. Wait for it to cool down. Ok! Your Kashmiri Mango Pickle is ready to serve.

Mango sweet, sour pickle

Ingredient

Mango = 2 kg, Sugar = one and half cup, mustard oil = two cups, mustard paste = three table spoon, garlic paste = two tablespoons, grated onion = two table spoons, ginger paste = one tablespoon, bay leaf = 4/5 piece, dry pepper = 7-8 piece, hot spices powder = One tablespoon, coriander powder = one teaspoon, cumin powder = one teaspoon, dried pepper powder = one tablespoon, five spice powder = three teaspoons, whole five spice = 2 teaspoon, garlic = 2 piece, salt = as per flavored, vinegar.= one teaspoon.

How to make

The mangoes have to be cut and used to wash water. Now switch on the stove. Put a pan on the stove. When pan become heat, you will have to give mustard oil in the pot. then give the mustard paste and stir carefully. Except vinegar and five spice, give all ingredients one after one and stir quickly. The spice should be well marinated and boil, so that it do not smell like green mangoes. When mustard oil is frying, a little pretty smell comes from it. Then give the mango in it and stir well. Now you have to give sugar in it, when the sugar becomes thickened, give vinegar and whole five spices and quickly cover the pan with lid so that it's smell does not vanish. After half an hour, mango sweet, sour pickle will be made. This pickle can be eaten with hotchpotch and flavoured rice.

Ingredient

Mango = 2 piece(big size), grated onion = 1 cup, garlic = 6-7 piece, dry chilli = 7 piece, mustard paste = two teaspoons, mustard oil = 2 cups, vinegar = one teaspoon and salt to taste.

How to make

The mango had peeled and cut like grated potato. Now mix grated onion and grated green mango with one teaspoon of salt keep it for 30 minutes. In the salt water, wash mango and onion well and after washing keep it a big bowl and let it dry in the sun for 4-5 days. When the mango and onion dry well, then take a pan on the stove. Give oil, add ginger-garlic paste and hot spices and all spices, fry well and then give dried grated mango and onion and stir well then cover with lid. At last, give vinegar and keep five minutes. Ok! Your pickle is ready for serving. This pickle can be eaten with hotchpotch and flavoured rice.

Sweet mango molasses pickle

Ingredient

Mango = One-and-a-half kilogram, sugarcane molasses = one kilogram, Bay leaf = two piece, fenugreek seeds = One teaspoon, Five spice (whole)= One tea spoon, black cumin seeds (whole) = One teaspoon, garlic = One piece should be thawed and salt = As per taste.

How to make

The mango will have to be cut in small size. Now put a pan on stove and heat the molasses. After 10 minutes, you will give mangoes in molasses and mix well. Then give all spices and salt in the mango molasses mixer and stir well till the beautiful smell is not coming. When the pickle will ready, put it in a large bowl, cover it with a thin cloth or a lid, and let it dry under the sun for a whole day. Once pickle is made,it is absolutely ready to eat, this is a very interesting recipe.
