- Spread 2 slices of bread with butter on one side.
- Spread the other side of breads with creamy and/or flavorful stuff like mayo, mustard, cream cheese, pepper jelly, horseradish, cranberry sauce, or pesto.
- Layer multiple kinds of sliced cheese to put the sandwich together.
- Grill to golden brown on both sides.
- Finely chop onion and celery, or puree in a Vitamix.
- Cook in the bottom of a soup pot with a bit of oil until translucent. Add chopped garlic.
- While onions and celery are cooking, puree tomatoes in a Vitamix.
- Sprinkle onions and celery with salt, pepper, basil, and oregano. Add marjoram and/or fresh parsley if you have some.
- Pour tomato puree on top.
- Put a lid on for efficiency, and allow to simmer until the flavor is yummy.
- Add a bit of broth or water if it's too thick. Cook it longer with the lid off if it's too thin. Add a bit of sugar or honey if it's too acidic. Add a dollop of cream or sour cream if you like it creamy.
Enjoy both while toasty warm. Dunk sandwich in soup as you go.
