ZUCCHINI LINGUINI WITH ROASTED SHRIMP
Ingredients
- 2 zucchinis
- 500g peeled and deveined shrimp
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- black pepper
- pepper
- 2 tablespoons lime juice
- 3/4 teaspoon garlic powder
- 1 yellow bell pepper, sliced thin
The steps
- Preheat oven to 200C.
- Peel long strips from zucchini using a vegetable peeler.
- Mix zucchini strips, sliced bell pepper, salt, olive oil, shrimp, black pepper, garlic powder and lime juice in a large bowl. Mix all the ingredients well.
- Spread the mixture in one layer in a roasting pan and bake for 8 minutes.
- Serve and Enjoy!
