DOUBLE CRUNCH SHRIMP
Ingredients
- 500g shrimp, peeled and deveined
- pepper
- salt
- 4 eggs
- 1 1/2 cups cold soda water
- 2 cups cake flour
- oil
- 3 cups bread crumbs
- 5 cloves garlic, minced
- 1 1/2 tablespoon minced ginger
- 1 tablespoon oil
- 2 tablespoons rice wine vinegar
- 250ml soy sauce
- 1/4 cup water
- 1 tablespoon cornstarch
- red pepper flakes
- 1/3 cup light brown sugar
- cooked white rice, for serving
- sesame seed, for serving
For Glaze :
The steps
- Dry the shrimp using paper towels.
- Place the shrimp in a medium bowl and season with pepper and salt.
- Whisk eggs and soda water in a separate bowl. Whisk until well-combined, then add cake flour. Whisk again gently. Make sure it isn't overmixed.
- In a large pot, heat oil until it reaches 180C.
- Place the bread crumbs in a bowl.
- Dip the shrimp in the batter, then to bread crumbs.
- Fry the shrimp until it becomes golden brown, then drain it on a wire rack.
- In a saucepan, heat the oil over medium-high heat.
- Add ginger and garlic. Cook until it becomes fragrant.
- Add the soy sauce, sugar, vinegar and red pepper flakes. Stir until it starts to simmer..
- Combine water and cornstarch in a small bowl.
- Add the cornstarch slurry to the mixture in the saucepan and stir.
- Cook the mixture or glaze until it thickens.
- Place the shrimp to a large bowl and pour the glaze.
- Mix until all are coated.
- Serve with rice and garnish with sesame seeds. Enjoy!
