DOUBLE CRUNCH SHRIMP


Ingredients

  • 500g shrimp, peeled and deveined
  • pepper
  • salt
  • 4 eggs
  • 1 1/2 cups cold soda water
  • 2 cups cake flour
  • oil
  • 3 cups bread crumbs

  • For Glaze :
  • 5 cloves garlic, minced
  • 1 1/2 tablespoon minced ginger
  • 1 tablespoon oil
  • 2 tablespoons rice wine vinegar
  • 250ml soy sauce
  • 1/4 cup water
  • 1 tablespoon cornstarch
  • red pepper flakes
  • 1/3 cup light brown sugar

  • cooked white rice, for serving
  • sesame seed, for serving

The steps

  1. Dry the shrimp using paper towels.
  2. Place the shrimp in a medium bowl and season with pepper and salt.
  3. Whisk eggs and soda water in a separate bowl. Whisk until well-combined, then add cake flour. Whisk again gently. Make sure it isn't overmixed.
  4. In a large pot, heat oil until it reaches 180C.
  5. Place the bread crumbs in a bowl.
  6. Dip the shrimp in the batter, then to bread crumbs.
  7. Fry the shrimp until it becomes golden brown, then drain it on a wire rack.
  8. In a saucepan, heat the oil over medium-high heat.
  9. Add ginger and garlic. Cook until it becomes fragrant.
  10. Add the soy sauce, sugar, vinegar and red pepper flakes. Stir until it starts to simmer..
  11. Combine water and cornstarch in a small bowl.
  12. Add the cornstarch slurry to the mixture in the saucepan and stir.
  13. Cook the mixture or glaze until it thickens.
  14. Place the shrimp to a large bowl and pour the glaze.
  15. Mix until all are coated.
  16. Serve with rice and garnish with sesame seeds. Enjoy!
