Coconut and piloncillo preserves

It is a habit to watch dark-skinned women walking in the sun with these sweets that adorn their heads and which inexhaustibly announce these Creole delicacies along the shores of beaches and roads.

For the preparation of the preserves, you should mix the coconut with water and the piloncillo in a pot, and leave the mixture on the stove for about twenty minutes. Just observe the most dense or thick mixture, add the vanilla and lemon zest. Store in sterilized jars or wait for the preparation to dry on a flat surface, wait for it to cool and harden so that it can then cut the squares or give it the desired shape.
