PIZZA FROM NICE

You will need:
1 kg of onions,
300 g of flour "Makfa",
30 g of fresh yeast,
90 g of butter,
2-3 large tomatoes,
2 eggs,
10 anchovies,
4 cloves of garlic,
2 tablespoons of balsamic vinegar,
1 tablespoon of sugar and a pinch of sugar,
1 tablespoon of malt syrup or honey,
a bunch of Basil,
olive oil,
a pinch of sea salt and sugar.

Cooking process:
preheat oven to 190 degrees. Dissolve fresh yeast in water. Sift the flour, add the softened butter and RUB it with flour. Make a deepening in the flour, add a pinch of salt, sugar, slightly beaten eggs and knead the dough. Leave it in a warm place for 2 hours.
Cut onion into half-rings. Heat 4-5 tablespoons of olive oil in a deep, heavy pan and fry the onion on low heat until clear, add balsamic vinegar, 1 tablespoon of sugar, malt or honey and cook on low heat for 30 minutes. Grind 5-6 anchovies, garlic, half Basil, add all to the onion and mix.
The dough is divided into 2 parts, roll each into a rectangular layer, put on a baking sheet, oiled, cover with a towel and leave for another 15 minutes. Bake cakes in a preheated oven for 20 minutes, then reduce the temperature to 180 °C and bake for another 20 minutes.
Scald tomatoes, remove their skin and cut into slices, removing the seeds and excess juice. Evenly, spread on the cakes onions, sliced tomatoes, remaining whole anchovies, sprinkle the top with Basil.
