Sweet Corn Potage and Home Made Breadsticks with Olives

Hello steemians,
welcome to my kitchen where we try not to kill anyone with food or fire :)
Just kidding, these weekend lunches became a hobby of mine and I really enjoy every moment of it. From looking up what to prepare, to these amazing photos and food itself.

Today I'm preparing potage and home made bread, everything from scratch. It's delicious and not so simple dish to prepare, but I promise you it's worth it!

How about some jazz to spice things up while we prepare some ingredients? I find that everything is easier with music, even cooking. Jazz is far from my favorite music, but there is something about it that makes me relax and there for make some magic come to life.

What you need:

  1. Sweet corn (I used about 450g, frozen);
  2. Butter;
  3. Onion (two kinds, for taste);
  4. Heavy cooking cream (200 ml);
  5. Chicken broth cube;
  6. Pepper;
  7. Bacon (optional, but delicious);

Instructions:

You will need a large pot for this, put in the onions, butter and a bit of olive oil and simmer it for at least 15 minutes on medium heat. The onions don't have to be chopped up fine, because you will use a blender to blend everything later on. After the onions get that "glossy" look you can add the sweet corn and simmer it for another 15 minutes before adding water, to boil it all up.

Ok, so you listened to some jazz, simmered some vegetables and now what? Now comes water, fill up your pot (about half way through) and leave it on medium heat until the sweet corn is cooked all the way through. It takes about 25 min to get there. When the corn is cooked, you take your trust-worthy blender and blend everything in that pot, as much as you can. When you can't blend no more and your dog is in on the other side of your apartment due to noise, that's when it's good time to strain it in another pot.

Add the heavy cream and chicken broth cube, along with some pepper (and other spices if you like) and put it back on the medium heat, for another 15 minutes or so. But wait, we are missing something. Oh, right, sorry for all the vegans reading this but it's time for bacon. Slice it in to thin stripes (or kindly ask your husband to do that, so you won't loose a finger or two), put it on some parchment paper and in to the oven it goes. After few minutes the smell will remind you that it is time to take it out and use it latter on as a crispy, delicious addition to your potage.

Home-made bread with olives:

  1. 500g of flour;
  2. Yeast (1/4 of the cube);
  3. 200ml of water;
  4. A bit of sugar (for the yeast to activate);
  5. Olives (finely chopped up);
  6. See salt;

Instructions:

We have a bread making machine that I use for mixing the dough, but you can do it by hand of course. Just make sure to leave it in a warmer place so the yeast can do it's job and the dough can rise. After and hour, your dough is ready, spread it out and cut in to stripes (or whatever shape you like), put some sea salt over it and bake on highest setting for 10 minutes.
Extra tip: if you coat it with some egg wash the salt will stick to it, much easier!

The lunch is served!

Serve your potage in some fancy dish, because why not, sprinkle some bacon over it and enjoy with delicious home made bread sticks. It was so good! Perfect combination of salty olives, creamy potage and crispy bacon.
