Since we are living in this insane sugar-is-in-everything world, it is normal we ended up addicted to it, struggling with many bad consequences that sugar has done to our body and life; so I'm happy to share with you this healthy and delicious piece of art!

Every now and then I ate some raw and sugar free cake but always thought it must be so hard to make it when it's so tasty. Damn me! It's very simple, done in half an hour and on the top of everything is very nutritious, full of vitamins, minerals and good fats.

All images in post are slightly modification of a same very tasty sweet inspired by Cheese cake. Actually, speaking about taste and ingredients there is nothing similar to Cheese cake, this is much, much better. It is made of nuts and fresh fruits. The basic ingredient is cashew nuts which with the lemon juice, coconut oil and honey turn into a quite unusual, interesting and unexpectedly good taste cream!

For those who are enthusiastic to try to make it by themselves I am posting a recipe, others can skip further reading till the end where I am wishing you Happy new year! :)

Ingredients for the cake base:

  • 200g almonds
  • 160g fresh dates
  • big patch of salt

Ingredients for the fil:

  • 300g cashew nuts
  • juice of 2-3 lemons
  • vanilla seeds
  • 100ml coconut oil
  • 90ml honey
  • 150 raspberries

Procedure:

Cake base:

  1. Dip dates into warm water and wait for 10 minutes to soften. Then remove the skin and the seeds.
  2. Mix with a chopper: almonds, dates and salt to the desired texture (it depends on your taste, but don't make a pasta).
  3. Put the mixture into the mold and align it.

Fil:

  1. Leave cashew nuts in the water overnight or at least five hours earlier. Before use try to remove as much water as you can, use a paper napkin.
  2. Warm up coconut oil and honey until they become liquid. Add vanilla seeds.
  3. Use multipractic to blend all the ingredients for the fil except the raspberries. Blend until you get a silky and smooth fil. If you don't have a powerful machine, the fil will be grainy like mine (it's imperfection can be even seen in photos). This part takes about 10-15 minutes.
  4. Two-thirds of the mixture spill over the cake base and align.
  5. Add raspberries to the rest of the fil and blend it again. Spill it above the white part and leave the cake in the freezer.
  6. Take the cake out about half an hour before serving. You can add some fresh fruits on the top or what ever you like but it is more about decorating because the taste is already perfect.

Note:

  1. Use nuts and fruits in a natural state (unpasteurized, without salt and sugar). As a sweetener you can use agave syrup instead of honey.
  2. Find one more pair of hands to help you - it's crucial for improving a taste, a good music and enjoy!
