Lemon Sponge Pie Recipe

This Lemon Sponge Pie recipe is unique and delicious! Pennsylvania Dutch Amish origin and this beautiful lemon sponge pie has been a big part of our heritage. The top of the pie is a light spongy lemon cake and on the bottom is a rich lemon custard. Very refreshing. VIDEO RECIPE below. Enjoy.

LEMON SPONGE PIE ~ PENNSYLVANIA DUTCH AMISH RECIPE

Ingredients:

1 pie crust
1 cup sugar
3 tbsp. flour
pinch salt
2 eggs, separated
2 tbsp. lemon juice
2-3 tsp lemon zest
2 tbsp. butter
1 cup milk

Mix the sugar, butter and egg yolks together.
Add lemon juice and lemon zest and stir till well combined. Add sifted flour and salt and mix until flour is absorbed.
Stir in milk and set to the side.

Beat egg whites until rounded peaks form.

Fold egg whites into batter just until combined. Do not over mix.

Pour into pie crust and bake at 350 degrees for 35-40 minutes or until firmly set.

Let pie cool and refrigerate and serve chilled.
Enjoy.

Ohh my goodness!! Lemon is a favorite of mine! Its so bright and tangy, whats not to love! This recipe has me super excited. Its so simple and easy to follow. @tesscooks4u - Good post, clear and easy to follow recipe and instrucions. Full disclosure - I know nothing about baking. But the pie looks great, and from the ingredients list, sure to be tasty!

When I watched the video I was surprised to hear you first mention 'the good memories' that making this pie brought back. Because my grandmother is the first thing I thought of.

My grandmother loved to bake - biscuits, buns, pies, cookies and more. She used an old style combo wood / oil fired stove, lots of warmth in the winter. Lemon meringue pie was one of her productions. Yes, the smell of something baking in the oven is lovely.

This might be the kind of lemon pie I am looking for. We have had several pies here in our place but all are lemon/lime pie cheesecake. I like food that is zesty. However, the pies I have tasted so far lacks the lemon-ness I am searching for. The ingredients are easy to find and the procedure seems easy to do as well. I hope I can let my sister do this for later this week lol!
