How to cook bread kvass And a little bit about kvass
Hi! Today I'd like to share with you my recipe of bread kvass.
First of all let me tell you about kvass.
So kvass is a traditional Slavic and Baltic beverage commonly made from rye bread, known in many Eastern European countries and especially in Ukraine and Russia as black bread. The colour of the bread used contributes to the colour of the resulting drink. It is classified as a non-alcoholic drink by Russian standards, as the alcohol content from fermentation is typically low (0.5–1.0%). It may be flavoured with fruits such as strawberries and raisins, or with herbs such as mint.
It has a pleasant refreshing taste, improves metabolism, has a beneficial effect on the cardiovascular system.
Kvass has excellent taste qualities; it quenches thirst due to the acids contained in it - dairy and partly acetic; has a high energy value, promotes digestion due to the carbonic acid contained in it, which facilitates the digestion of food, its absorption and increases appetite. It also contains vitamins, free amino acids, sugars and trace elements. In kvass contains many vitamins B1 and E, which explains its useful properties. The kvass also contains valuable enzymes.
Kvass, as a product of lactic acid fermentation, by action on the body in many respects is similar to such products as kefir, yogurt, acidophilus, kumis. It regulates the activity of the gastrointestinal tract and cardiovascular system, improves metabolism, prevents the development of pathogens, raises the tone . Kvass can be used even as a staple food.
And now let's move from theory to practice!
To prepare kvass I took |

- kvass wort
- pressed yeast 4-7grams
- 6 table spoons of honey
- rye bread
- 3 liters of warm water.
Kvass wort consists of barley malt, lemon acid, rye flour, corn flour. But I bought ready kvass wort in grocery store.
So to cook kvass I mixed 3 liters of warm water with honey until it is completely mixed up. You can see it on photos bellow
Then I took pressed yeast and put it in glass jar. And again mixed it.
After it I put in my glass jar nearly 7-9 table spoons spoons of kvass wort.
When all ingridients were in jar I again mixed them by table spoon, after what I covered the jar with a lid, and put it in dark place to infuse for4 hours.
After 4 hours I cut bread in pieces and put them into my kvass. And then I leave it to infuse for a day.
When I opened it on next day I got such a refreshing drink which you can see on photo bellow.
Then I filtered it and put it in the refrigerator a little cool. After what my kvass was ready for use.
