Spicy Dried Anchovy Sambal

Okay, back to me, cooking this recipe, I ended up cooking only the Sambal without the Petai. At first, I requested @beverlyjoe to cook but he said it's my turn to cook this week. Hmm so, today I cooked this dish, hopefully it's not too salty. That's my weakness. Everytime I cooked, either it's too salty or tasteless...LOL.
Here's the receipe.
Ingredients
1 bowl of dried anchovies
3 tbsp of chili paste or fresh chili (blended)
3 onions (blended)
1 clove of garlic (blended)
1/2 inch of ginger (blended)
1 tbsp of tamarind pulp, mixed with water
2 - 3 tbsp of sugar
Salt to taste
Method
Heat oil and stir-fry blended ingredients and chili paste until the oil rises to the surface. Chili paste must be stir-fried with sugar to give a shiny reddish colour to the sambal.
Add dried anchoivies and cook until slightly crisp.
Add sugar and stir-fry for a while before pouring in tamarind juice.
Season to taste with salt.
Serve with hot steam rice or Nasi Lemak.
