Food Blog: Vietnamese Dinner at Tempus Fugit, JW Marriott Phu Quoc

Do you know that Vietnam is heavily influenced by the Chinese culture? Even after Vietnam gained its independence, the Chinese influences remained and are very well preserved in the country and are widely practiced in different fields like arts and politics. However, you can easily trace the French influences that left are from the French colonial throughout the country. From the architecture to the local cuisine, you'll almost forget that you're in Vietnam.

If you ever be in Vietnam, the must-try food in Vietnam is not only 'Pho' but also their staple food 'Bahn Mi'. This baguette is derived from the French baguette with salami and cheese with the local savory ingredients like Vietnamese pork sausage and pork floss. The fusion of French with the local ingredients is one of the reasons why Vietnamese food is well-known all across the world.

Without further explaining the histories, let's skip right into the topic. Follow me to this marvelous fusion restaurant, Tempus Fugit at Phu Quoc Island. Not to exaggerate, the food that we were served was top-notch, the ambiance was perfect and the plating of food is just outstanding. I can't wait to share it with you.


Tempus Fugit is a fusion restaurant that serves both authentic Vietnamese and International cuisines such as French and Japanese. During the day, this restaurant hosts the breakfast buffet for hotel guests at the beachfront and it turns into a classical restaurant at night.

Since the menu here is extensive, we decided actually went to this restaurant twice for their food. The first night we tried the local Vietnamese and second day for their French cuisine.


First, we started off by having the classic Vietnamese summer rolls and grilled baby squid for the appetizer. If you love a refreshing roll beside the deep-fried version you'll get from a Chinese eatery, you're going to love this! The crunch from the fresh greens and herbs with the vermicelli is a perfect combo to get your palate started. Just a hint of seafood flavor from the shrimp chase by the sweet and savory dipping sauce is just to die for!


As much as I love the summer rolls, the baby squids are the next level of goodness. Even though you're not a fan of seafood because of fishy taste, but I am sure you're going to love this! Typically, grilled squid can be pretty chewy when they are dried out. But it doesn't happen in this case, they are soft and flavourful at the same time. The slight char flavor on the squid adds another dimension to the dish and it's the sauce. It's minty, limey, savory and creamy at the same time.


I've heard so much about Vietnamese grilled pork belly with vermicelli from my friend, whom she highly recommended me to try it out if I ever visit Vietnam. Bún Thịt Nướng in Vietnamese is a noodle bowl that is assembled by a plethora of fresh herbs and commonly eaten with fish sauce. If you haven't known already, Vietnam is the born place of fish sauce. Fish sauce is highly used in Vietnamese cuisine as a replacement of soy sauce. It has a deeper savory flavor comparing to soy sauce. It adds a savory depth to the dish and definitely can spice things up. Honestly, this is one of the best-grilled pork bellies that I ever had. It is grilled to perfection! It is juicy, tender and the marinates are perfect!


Grilling a lamb is not a simple task. It looks easy by just tossing the lamb on the grill, wait for it to be ready. But, to perfect a lamb, it has to be perfectly marinated, grill to perfection where it's not overly cooked or undercook.

Although this is not an authentic Vietnamese cuisine, I can definitely taste a hint of Vietnamese spice. It is tender and succulent, every bite is just pure satisfaction. It's definitely those kinds of meal that once you have it, you will crave for it all the time.
