Mike's Sub Shop

If I had a sub shop it would be similar to the soup restaurant in the Seinfeld episode of The Soup Nazi. If you have never seen it, stop reading now and go watch it.

If you're a vegetarian or a vegan, you've made a personal choice and I choose not to have anything on my menu for you to eat. If you are lactose intolerant or have medical issues with gluten, I am deeply sorry about your medical condition but again, I have nothing on the menu for you. Go out of the parking lot, turn left and you'll find a Subway on the right side of the road in about a half mile.

20180602_163132[1].jpgMike's Sub Shop starts with artisan bread, usually with garlic cooked in, and lightly toast it over a gas flame. The toasted bread is then coated with salad dressing. This is a sun dried tomato dressing.
20180602_163614.jpgNext we add generous layers of smoked turkey and cheddar cheese.
20180602_164206.jpgNext comes layers, generous layers, of ham, Swiss cheese, and Genoa salami.
20180602_164703[1].jpgNow top it off with veggies. Lettuce, peppercinis, bell pepper, and tomatoes. Optionally the addition of thinly sliced onion and black olives is also very good. When I say thinly sliced onion, Mike's Sub Shop cuts them so thin you can almost read a newspaper through them because the flavor of onion is much better than the taste of onion. Finally, top it off with more of the sun dried tomato dressing.
20180602_164830[1].jpgAlong the lines of go big or go home, the foot long at Mike's Sub Shop makes four servings. I guess we could have a promotion that anyone that eats a whole one by themselves can have it free, but they have to pay for the ambulance they will need. We accept no responsibility for your eating habits. I'll have to get the lawyer to draw up a release form for people that want to try to eat a whole one to sign.

Now that you know how we do it at Mike's Sub Shop you can try this at home. All the ingredients were available at our local Kroger and the gas flame used to toast the artisan bread was a gas grill. An oven on broil will do just about the same job. Plus at home you can mix and match meats, cheeses, veggies, and dressing to make your own sandwich. In the vein of The Soup Nazi, if you ask for too many substitutions at Mike's Sub Shop you get told "No sub for you!". If you didn't watch the episode of The Soup Nazi, you probably won't get that last part.
