Caribbean courgettes

Colour is everything in the Caribbean. On the streets, the clothes they wear and especially in the food. No meal is served that has a dull look. Things need to look colourful and festive. Like this courgette soup. I have made that before in Belgium, it is never this green, but over here it is. And if it were possible, they would make it fluorescent green, to stand out even more. But don't worry, it tasted delicious, especially because it was made with a lobster broth!
