Spring Salad with tulips, dandylions and yogurt cheese

Home-grown salads are a sure sign that spring is finally in full swing.

Salads are extra delightful when the ingredients include home grown spinach and kale, dandelion, oregano and tulips! We also included some pickled beets from the pantry for that extra zing and sprinkled a homemade vinaigrette over the greens.

You might be thinking that the flowers are there just to make the salad look pretty but they aren't! They add delicious flavours and textures as well as that glorious pop of colour.

Everything but the yoghurt came from the homestead garden but we made sure to mix plenty of home grown ingredients into it.

Yogurt Cheese with Edible Flowers and chives

Mix the ingredients with the yogurt (thick yogurt is best)

Hang in heavy cheesecloth and allow the whey to drain out.

This is a delightful soft cheese using spring garden ingredients. Today we used chives, dandelions and oregano. Its really packed with flavour and I would gladly eat it every day! This soft cheese is very easy to make. You can find the yogurt cheese recipe here.

Delicious! I always wonder what flowers are edible and which are not. My kids accidentally ate something not so great, daffodil flower. Immediate stomach cramping and throwing up. I do a lot of Google searches to make sure. Currently I planted some edible chrysanthemums, Nasturtium, and daylilies. They're so pretty in a salad!

What a beautiful salad! Made my mouth water. Spring has sprung when you can get salads like this out of the garden.

I often think anything with a bold colour will translate to a strong flavour but not in this case. The flavour is milder than lettuce and the texture is really nice.

That's good to know, with picky eaters!
