A Simple Healthy Two Ingredient Side Dish

This is a quick and healthy favorite of my family, Avocado & Cherry Tomato Salad.

For this particular rendition of the recipe, I had these awesome orange cherry tomatoes on hand. Orange cherry tomatoes are smaller and sweeter than regular tomatoes and their sweetness makes them especially scrumptious paired with the diced avocado. The orange comes from a mutation that causes the orange pigment. The plant itself is a sprawling vine type that produces abundantly throughout the season.

Cherry tomatoes have a large amount of Vitamin C and Vitamin A and also contain lycopene, which is an anticancer agent. So tastes great and good for you!

The other ingredient, avocado, is in this instance a Florida avocado. Florida avocados are a little larger than other varieties and have a short shelf life. If you store the avocados in the refrigerator it will slow the ripening. Florida avocados also have a firmer flesh which makes them better for slicing and cubing.

Avocados are the highest protein fruit and they have 60% more potassium than bananas do per serving. Avocados are a much healthier way to consume your fat for the day. Florida avocados are known for being lower in fat content than other varieties. A Florida avocado has about 10 grams of fat less than the standard Hass variety. So it pays to read labels and descriptions when you are shopping for avocados!

Now for the recipe - you already basically have it!

1 Florida Avocado cut into cubes
2 cups of Orange Cherry Tomatoes - halved
seasoning salt of your choice
splash of lemon or lime juice

Combine and let sit for 30 minutes and you'll be rewarded with a melding of the flavors.

I can't tell you how well leftovers would keep in the refrigerator - because I've never had any left over to try it!

That does look good! I've got avocado in the fridge, too. I might toss some feta in there too, for good measure. I think that might be lunch tomorrow. :)

That is a no fail combo! Two of my favourite ingredients! - I also quite like an avo and feta combo!

Hmmm... I think my oldest would love this! She loves cherry tomatoes and she loves avocado! In fact, she seasons her sliced avocado exactly like this already!

This is a combination I have never thought of as we seldom eat salad. I might give it a try. Yay!!!
