A Green Mole and here is the recipe
Ingredients
10 green tomatoes
2 jalapenos peppers
3 portobello champions
1/2 onion
3 garlic cloves
1/4 tofu block
1/2 bunch of parsley
1/4 cup pumpkin seeds
1/2 cup of kale
1/2 teaspoon coriander seeds
salt to taste
The tomatoes I removed the shell wash them very well and I cut them into pieces along with the chilies and put them in boiling water.
The cactus leaves remove the thorns and clean them well and I made some transversal cuts and I put a little oil on them and broil them slowly.
Right there use pumpkin seeds to roast.
Cut the onion, mushrooms and garlic and parsley into pieces. The cactus leaves are broken into pieces, the kale leaves have removed the stem that is very thick
The tomatoes, already boiled and lukewarm, pass them to the blender together with the chilies to remove the seeds and grind them together with the water from which they were boiled.
This mixture is put in a pan with a little olive oil and the other ingredients are added to a medium heat in a processor. The pumpkin seeds are ground and that powder is added as well as the coriander seeds and salt to taste. The tofu is broken into pieces and added to take the flavor of the mixture.
Leave it for a while longer at medium heat.
It is a type of Mexican Mole that can be thicker just because I like it to be like a soup.
It is very nutritious with the fiber of the cactus and all the vitamins it contains.
