Sweet Potato Balls in Palm Sugar and Coconut Milk Sauce - Indonesian Cuisine

Sweet potato balls in palm sugar and coconut milk sauce is one of the popular Indonesian dessert. We normally called it “Kolak Biji Salak” in Bahasa. Again it is not so easy for me to say it in English, if you’re not so familiar with Bahasa, lemme try to explain...
Kolak means, kinda sweet soup dessert.
Biji means, seed.
And Salak is a name of a fruits.

The reason we called it Kolak Biji Salak is because the balls are shaped like Salak seeds, also in term, size and colour.

And if anyone want to know how the taste, but never tried before, as for me.. I can say the taste and texture is about the same as bubble tea, chewy. But unlike bubble tea, you’ll need a spoon instead of straw to eat them, because the size of the balls are bigger.

INGREDIENTS

  • 400 g sweet potato
  • 1/2 cup glutinous rice flour
  • 150 g palm Sugar
  • 1 1/2 tbsp corn starch
  • 200 ml coconut milk
  • 150 ml water
  • salt to taste
  • sesame seed for sprinkles (if you prefer)

INSTRUCTIONS

Step1: Get ready the sweet potato

  • Peeled and diced the sweet potato.
  • Boil/steam sweet potato until fully cooked and soft.
  • Drain, then transfer the sweet potato into a bowl.
  • Using a potato masher, mash the cooked sweet potato until completely smooth.
  • Add in glutinous rice flour and mix them well until become smooth dough.
  • Begin to form the dough, take about one teaspoon of the dough and shape it to make a ball using palm of your hands.

Step 2: Boil the balls

  • Boil the water in a pot, starts to drop the balls dough into boiling water.
  • Cook until all the balls have been floating and then drain them and let it cool down.

Step 3: Making The palm sugar sauce

  • Place palm sugar, 150 ml water, and a pinch of salt into a pot and heat over medium high heat, stir to help dissolve palm sugar.
  • Once the palm sugar is dissolved, strain it to transfer to a skillet.
  • Mix corn starch and water in measure cup or small bowl and whisk it.
  • Add in the starch mixture into the boiling palm sugar and whisk it until slightly thickened.
  • last, Add in all the sweet potato balls into the palm sugar sauce. slowly mix them.

Step 4: Making The Coconut Milk sauce

  • Place coconut milk into a pot.
  • Add in a pinch of salt to taste.
  • Heat it over high heat, and let it boil for few seconds.

You can enjoy them both in cold or warm.
If you want to serve it warm, place some balls in a small bowl, pour it up with some coconut milk and sprinkle it with some sesame seeds, if you wish!
but, for me.. I prefer to having it cold. So I’d like to store the balls and coconut milk in a separate container in the fridge before I can eat them away 😆😅
