Farmers Market Finds: Lion's Mane Mushrooms {Perfect for Veggie Fajitas!}

Happy Monday my friends! It's been a bit since I've had a chance to actually post food on #fruitsandveggiesmonday (null entry, but still fun to join you all!), but I was so excited about these mushrooms that I finally came across at the farmers market that I couldn't help but make some time to share! I know I have seen a few others post about Lion's mane mushrooms before, but this was the first time I came across some of these beautiful fungi!

Besides just looking so soft and fluffy, these babies have some major possible health benefits including reported mental health, immune and cardivascular boosts! How's that for making the most out of your meal? I had a good tip on Discord from @byronmushrooms not to cook them on too high of heat or for too long because it will degrade the health benefits. Another friend of mine suggested veggie fajitas, which sounded like the perfect way to use them for the few time!

I didn't really write down a recipe, but I'll give you the gist of how I put everything together. I made a nice black bean and pineapple salad/salsa? first off to give it time for the flavors to work together. Just cooked black beans, chopped fresh pineapple, minced jalapeno pepper, and a drizzle of pineapple white balsamic vinegar for that nice acid note.

While that rested, I started on the fajita filling. Sliced onion, yellow bell peppers and a minced chipotle chili in adobo sauce went into the skillet first. After about 10 minutes of cooking over medium heat I added in a spice mixture with chili powder, cumin, smoked paprika, coriander and a few other spices. I continued cooking the veggies for another 10 minutes before adding my chopped mushrooms at the end. I think I let it all cook down for about 5 more minutes on lower heat.

While the vegetables finished cooking, I whipped up a quick guacamole out of avocados, lime juice and fresh cilantro (coriander). Oh man does that just hit the spot! Everything is better with avocado. Once all of the components were finished, we layered up in some sprouted grain wraps and enjoyed!

You can just see a little bit of the mushroom in the picture above. Once cooked they almost looked a little like crab or lobster. They put off a lot of moisture, as is pretty common for mushrooms, making these a juicy, yet delicious mess to eat. It was fun to try something new, so I will definitely grab some more soon. This was the first time I saw the "mushroom guy" at the market this year. I believe he also had oyster and one other variety, so perhaps I'll grab a different type next week to play with! Until then we have a few more servings of these yummy fajitas to finish off...

Never tried those guys and I've never had a mushroom I don't like.

I haven't been too experimental yet, but trying to grab new ones as I see them! I'm happy after the winter absence that the mushroom stall is back so hopefully he has a few different varieties to share!

There are 4 that are very popular where I live all seasons. With 3 or 4 more seasonal ones that aren't really expensive. They sell a variety pack which is great. I like buying it and adding to vegetables for that flavor only mushroom can give.

Wow I have to admit at first I thought those were rolled towels from the thumbnail LOL!

Part of me thinks I should have changed that first image, but I'm having too many good laughs hearing what everyone thought they were! I could have done one of your "guess the image" games if I had thought about it. ;)

The taste of these is very mild i find they are better as a texture with spicy things. They are pretty easy to grow too.

Oh they are easy? Good to know. I really would like to look into growing some of our own. I love supporting our local farmers market, but it's nice to be able to save some money and have easy access to super fresh food and fungi! :) Thanks for the tip.

I bought a grow kit off amazon and it gave me 5 blooms (about 10 bunches). Then you can find a dead log to put the kit sawdust on in hopes of seeding it. The kit just needs misting about 3-5 times a day, pretty easy.

Oooh, nice! I think we've got plenty of dead logs behind the house we could use.

Paul stamets sells plugs on fungi.com that you could drill into the dead logs for potential mushroom farming. If you get enough rain and shade they should grow well.

Never seen these type of mushrooms before, very interesting find. The recipe is awesome, any mushrooms will be ok, so I will try to make it soon. Thank you for sharing!

Aren't they fun? I usually use portabellas, but any mushroom should work! Happy to pass along a yummy idea. 😊
