Fungi Friday - Chantrelles


Chantrelles are one of my favorite wild mushrooms. They like to grow early summer to late fall after it rains. I find them mostly in hardwood forests with dark soil. Take note of the veiny gill pattern. They also seem to have a sweet smell almost like a flower of some kind.

I like collect them in a netted bag so the spores have a chance to fall out and spread more.

After giving them a good wash they can be dried or cooked straight. My favorite use for them is on pizza or in gravy on fish or poultry.

These are probably my third favorite shroom for taste. #1 is chicken of the woods #2 is the crown tipped coral.
