Sustainable Feast in The Garden of Eden

It is a marvelous day in the Garden of Eden, and we are giving thanks for more than enough of everything in this abundant life of freedom!  


We made a delicious feast for our volunteers today, cooking over fire using our handmade earthen rocket stoves in our sustainable outdoor kitchen! As usual, there was more than enough food for everyone, and we are happy to share our abundance with you.

We prepared salmon, potato pancakes, garden salad, and sautéed veggies today!



We had a beautiful spread with lots of delicious things for everyone to enjoy.



Our garden salad was made with a bed of spinach topped with bell pepper, red onion, sliced mushrooms, red and yellow cherry tomatoes, creamy avocado slices, and crunchy sunflower seeds.



For our main dish, we served tender, flaky, nutritious, and delicious pan seared salmon filets. This is one of our favorite types of fish, and it has lots of omega 3 fatty acids for great health!



We also served sautéed onions, garlic, mushrooms, zucchini, yellow squash, and mustard greens for a wonderful side dish bursting with more vitamins and minerals!



The star of today's feast were our hot, crispy, tender potato pancakes! We made this huge platter of them out of leftover mashed potatoes mixed with a beaten egg, green onions, salt, pepper, and a little bit of flour for binder. We served cinnamon applesauce, smoky sriracha sauce, and creamy whole milk yogurt in lieu of sour cream on the side as condiments for these hearty and satisfying potato pancakes.



We served sour kimchi on the side too. This fermented dish is great for good gut health!



We even prepared an easy dessert platter for tonight's feast! We served brownie bites, chocolate covered cookie dough bites, sliced strawberries, and a bowlful of whipped cream for dipping and dunking and topping. We don't always have dessert with our feasts, but now and again it's a nice treat to have something sweet to finish a meal.



It was a lovely and wholesome meal with some of our favorite foods! Thank you for sharing our feast with us today.

We do all of our cooking over fire, using wood that was otherwise destined to end up in a landfill! This is one of our rocket stoves in action - we built it by hand out of dirt.
