It's All in The Filling part 2

Preparing filling has become somewhat an endless experience for me over the years. On some occasions I can be in the mood to sample meaty mixtures that carry compacted textures and distinct aromas that will burst out on every bite. The juices that are created during the cooking process also contribute to this as steam, boiling or other methods introduce moisture content. Some of my favourite dumpling dishes such as soup dumplings not only carry meaty mixtures but also powerful stocks that seep out upon breakage of the casing. They release amazing smells and flavours simultaneously and its almost an overload of gourmet delight. For those who are into a little spice, the addition of specific herbs and spices can really turn up the temperature.
