These bright yellow so-called WEEDS by many are actually very powerful herbs with so many amazing health benefits. And after reading this, you might have a totally different perspective about these beautiful dandelions which really means "The Lion's Tooth", but it also symbolizes the SUN.

These yellow flower heads open in the daytime and close at night. It exudes a milky white liquid when the stem is broken.
The flower becomes a white ball of fine hairs and seeds when the flowerhead matures.

Many people if not most people are not aware that these beautiful dandelions are EATABLE.
As a matter of fact you can eat an entire dandelion; the leaves, roots, the stem and the flower which you can eat raw, boiled or infused into a tea. People also have incorporated dandelions by making a dandelion wine, or in a coffee-like drinks by grinding the roots, my mom also makes the best honey from the dandelions which I will share a recipe some other time if you like.

You can also make a SUPER HEALTHY TEA by using the root, stems and the flowers of the dandelion.
The dandelion greens which have somewhat a bitter flavor, can be also used as an addition to a sauce or used as a garnish or cooked to minimize the bitter flavor.

POSSIBLE SIDE EFFECTS

If you have skin sensitivity, or are allergic to certain plants then dandelions might cause an allergic reaction when applied on your skin or through your mouth.

Dandelion leaves are rich in oxalates which means we should not intake large quantity of it, but it be taken in therapeutic amounts.
Even though dandelions are non-toxic, poisoning has been reposted in young children from eating the stems of dandelions, so if you have little ones, I would probably stay away from the stems, or just keep close eye on it.

In Slovenia, in spring we eat young leaves like a first season's salad simply with oil, vinegar, and salt.

That is great. I will definitely have to try that out.
