Hi dear community of food healthy, I am very happy to participate in this contest and to show you how to prepare this delicious and healthy recipe: Lasagna with zucchini and spinach. My entry in this fourth week of the challenge organized by @healthsquared and @sweetsssj.



This rich recipe is perfect for dinner, suitable for coeliacs, diabetics and special diets. It is very easy to make, with accessible ingredients and most importantly, very healthy. "No flour, gluten free, low carb"

Properties and Benefits of Zucchini:



The zucchini is composed of 95% water. This food has no caloric content, therefore it is highly beneficial for the body.

Immune system (folates).
Collagen, teeth, bones, red blood cells, immune system (magnesium).
Muscles and nervous system (potassium)
Laxative (potassium).

It contains a very good amount of minerals and trace elements, it also contains phosphorus, potassium, magnesium and calcium. The consumption of zucchini in our diet will help us to lower the level of cholesterol in our system, its high levels of vitamins A and C also contribute to the reduction of the risk of atherosclerosis.

It also contains:

Vitamins: C, B1, B2, B6, folates or folic acid.
Minerals: Potassium, magnesium, sodium, iodine, iron, calcium and phosphorus.
Others: lots of water, carbohydrates, proteins and very few fats.

Properties and Benefits of Spinach:



Spinach is a vegetable with a high content of fiber, vitamins and minerals, while it has a low content of fats and sugars; therefore, it makes it a very beneficial vegetable for our health. Among the benefits that it brings, we have the following:

Reduces blood pressure.
Prevents diseases of our cardiovascular system, such as arteriosclerosis and cerebrovascular accidents.
It is very beneficial to our eyes thanks to its content in beta carotene, xanthene and lutein.
It has anti-inflammatory properties.
Protects our bones, fighting osteoporosis.

3 zucchini.

250 grams of spinach or chard leaves.

450 grams of vegetable or animal Ricota, we use delaminated. (We can also use cooked and ground chicken breast)

2 eggs.

Salt and pepper to taste.

1/2 teaspoon of oil.

Cheese to taste to gratinate (we use deslatosado).



1.- Slice the zucchini along, in thin strips. Reserve. You can grill them round and round.



2.- Blend the eggs.



3.- Add the spinach and liquefy.



4.- Add Ricotta, salt, pepper and liquefy.



5.- We grease the mold and add a little green mixture.



6.- Little by little we are adding the sliced zucchini previously to the green mixture.



7.- Repeat the previous step until filling the container or mold.



8.- Add or sprinkle cheese.



9.- Bake in preheated oven at 250 degrees C from 30 to 35 min. To gratinar the cheese 5 minutes and ready.
