Hello my dear friends, as we all know, breakfast is the most important meal of the day, but sometimes we have a coffee with milk quickly, grab a cookie or toast with olive oil and nothing else. In this opportunity of the coach contest @healthsquared and @sweetsssj I want to propose this option to try some avocados with baked eggs, a very healthy and energy breakfast that will undoubtedly leave you very satisfied all morning.

Unlike our usual breakfasts, you will see how good it feels to have eggs, along with the vegetable fat that avocados give us.

Ingredients:

Avocado
Eggs
Salt
Pepper
Roe to decorate
Chives to decorate

Preparation:

We preheat the oven to 200º with heat up and down. While the oven reaches the indicated temperature, cut the avocado trying to get two equal halves and carefully remove the seed.

We split an egg and use it to fill the gap of the avocado, ensuring that the yolk remains intact. Depending on the size of the eggs used, we will have a bit of clear that we can store in the fridge for other preparations.

Season with salt and pepper and bake for 10 minutes with heat only on the bottom, until the clear is curdled and before the yolk dries.

We take it out of the oven and decorate our delicious avocados with a spoonful of roe and a bit of chopped onion.

To complete this easy and delicious healthy breakfast, I suggest you accompany the avocados with a slice of wholemeal bread. You will see how much you would like this breakfast different from the usual ones.
