Easy Cranberry Sauce

This easy cranberry sauce is a healthy holiday recipe can be made as a side dish, or as a naturally sweet dessert.


 

Having a big turkey dinner with all the trimmings usually means a lot of cranberry sauce in my home. When I was growing up, cranberry sauce was slid out from a can and just laid on the plate, looking sad. It was even worse when my mom would cut it, and slices of jellied cranberry sadness was placed on each plate. 

It may come to no surprise to you that I didn't like cranberry sauce when I was growing up. The gelatinous glob had little to no flavor, and the texture was something between jello and despair. Learning how to make cranberry sauce actually wasn't hard.

This easy cranberry sauce is now a family favorite at our holiday meals. 


Simple and ready in less than 15 minutes, it's got a deep flavor and wonderful texture. Sweetened with orange juice and honey, it's far better for you than the store bought canned stuff. The Frenchman normally doesn't like a lot of sour, tangy foods, but he really liked this easy cranberry sauce. 

I am glad that it's healthy, and flavorful. Turkey dinners, no matter what time of year, just wouldn't be the same.  The best part is that it only takes 6 ingredients and 10 minutes cook time. 5 minutes to cool and you are ready to go! Great for a last minute side dish, too. 

You can use either fresh or frozen cranberries. If you are using frozen, you will want to thaw them under some warm water for about 3-4 minutes, then drain completely. After they are thawed, they will cook up just like the fresh ones. This makes it easier to have a Thanksgiving style dinner in April. (yes, we do that when the Frenchman wants turkey for his birthday)

Ingredients:

  • 2 cups cranberries 
  • 1/2 cup orange juice
  • 2 teaspoons cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 1/4 cup honey

Instructions:

  1. In a medium sized sauce pan over low heat, add all the ingredients.
  2. Stir to combine.
  3. Allow the cranberries to simmer for 6-8 minutes. They will begin "popping" as they are heating. Stir frequently to avoid burning.
  4. Continue to simmer for an additional 2-3 minutes, allowing sauce to thicken. Remove from heat and allow to cool before serving. 
  5. Store leftovers in the fridge for up to 3 days, or in the freezer for up to 2 months.
