Loaded Cauliflower Soup

When the weather turns cooler, our thoughts can easily turn to comfort foods. Soups, stews and all things warming come to mind. Often, soups are loaded with creamy goodness, but also lots of carbs.

While carbs CAN be a good thing, they are a no-no while on keto. What's a soul to do? How do you get the carby feeling in your mouth satisfied, and all the comfort foods consumed without the guilt?

Enter in the humble, versatile cauliflower. It's the perfect veggie for low carb, because it can do so much. It can become pizza, a side dish, mashed faux tatoes, faux potato salad and even soup.

Rich, creamy and very satisfying, it has loads of flavor. Perfect for those crisp, fall days as well as during the heat of the summer, loaded cauliflower soup has all the flavor of the famous loaded baked potato soup, minus the carby starches of the potatoes.

When you need to make a quick and easy soup, that is ready in less than 30 minutes, try this loaded cauliflower soup. It will fill you up without making you feel overly full and ready for a long winter's nap!

Ingredients:

  • 1 head cauliflower
  • 4 strips bacon of choice (I used turkey)
  • 4 Tablespoons butter
  • 2 cloves garlic, minced
  • 2 cups heavy whipping cream
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1/2 cup cheddar cheese

Instructions:

  1. Cut the cauliflower into 1 inch pieces. Set aside.
  2. Cut the bacon into strips, brown in a skillet until crispy and set on a paper towel to drain.
  3. In a heavy bottomed pot, add butter to melt.
  4. Stir in garlic, and cauliflower and sautee for 5-7 minutes, to allow veggies to sweat and soften. Continue to simmer for an additional 15 minutes to allow the cauliflower to completely soften.
  5. Gently mash the cauliflower, leaving some of the pieces in larger sizes.
  6. Add cream and broth, salt and pepper and stir to combine.
  7. Simmer for 20 minutes on medium low heat, stirring infrequently to allow to thicken, but not burn.
  8. Once soup begins to thicken, add cheese and stir to melt.
  9. Stir in bacon. Allow to heat through on low for another 5 minutes.
  10. Serve hot, topped with additional bacon and cheese, sour cream and green onions if desired.
