Peanut Butter Chocolate Chunk Bread


Great with coffee or tea, this peanut butter chocolate chunk bread is moist, fluffy and oh so good!


The Frenchman loves his chocolate. He actually has a stash of it in his room, and I can tell when he's been on a "binge" when the wrappers start to overflow from the garbage. Of course, my hubby isn't much of a chocolate fan, so buying chocolate bars or candy doesn't happen a lot.

But, when we want something rich and chocolatey? This quick bread is going into the oven. With rich chocolate chunks, brown sugar and loads of peanut butter taste, it's almost as if you are eating your favorite peanut butter cup candy.

My favorite part of this is that the quick bread goes together quick (hence the name) and it's got a glorious smell while baking. You can slice and freeze the slices for an easy snack anytime. It's also great for sharing at gatherings and parties.

This peanut butter chocolate chunk bread is sure to be a hit with your family!


I used natural peanut butter in this recipe, as I am not a huge fan of what they put in regular peanut butter. But, if that's all you have, or that's all you use, it'll work just fine in the recipe. Another great substitution idea is to swap out the peanut butter for almond butter or sunflower butter if you have allergies to peanuts. The quick bread will still be delicious!

Also, if you need it dairy free, here are some options:

  • sub out the butter for coconut oil
  • exchange the milk for almond or coconut milk

Ingredients

  • 1 cup brown sugar
  • 2 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup melted butter
  • 1 1/2 cup milk
  • 2 eggs
  • 1 cup peanut butter
  • 1 package chocolate chunks

Instructions:

  1. Preheat oven to 350. Grease two loaf pans.
  2. In a medium mixing bowl, combine sugar, flour, baking soda and salt.
  3. Using a separate bowl, add melted butter, milk, eggs and peanut butter. Stir well to combine.
  4. Add wet ingredients into dry and mix until well combined. Fold in chocolate chunks.
  5. Divide batter between the loaf pans, and bake for 40-45 minutes, until toothpick comes out clean.
  6. Cool before slicing.
