Fermented Tea aka Kombucha - My Other Cup of Tea

I never had a taste of commercial kombucha before. I was just introduced to it from researching about leaky gut and how to help our tummies digest food.

Haven't been drinking soda either so I was looking for something carbonated that I can drink.

Kombucha - it's simple. All I needed was organic SCOBY since we have organic tea and organic cane sugar at home. I didn't think to go online and look for a freebie, I just got an organic kombucha starter from Azure Standard.

This post is long overdue and here I am finally writing it. I had a long chain of kombucha talk with @riverflows and @thelaundrylady in this post.

I made 2 batches since that conversation.

The first batch had 3 flavors for the second fermentation:

  1. 25% clouded apple juice c/o @quochuy
  2. 25% sliced mango c/o @riverflows - I forgot the turmeric
  3. 25% sliced strawberries c/o @quochuy again - it did make the kombucha fizzier
  4. 25% regular - just in case the little ones didn't like the other concoctions

The 2nd batch had 2 flavors for the second fermentation:

  1. 50% clouded apple juice
  2. 50% spearmint c/o @thelaundrylady - can't make the tea with mint because of the volatile oils in it that will kill the SCOBY

And the final result...

All I can say is, I like all the flavors! But the best seller so far is the spearmint flavor. I might need to add more fresh mint leaves next time for mintier taste.

@futurefarmers ask for kombucha and I ask them to use stainless steel straw. We really like it. They call my SCOBY the slime and I can't help but laugh.

For hubby, he likes his iced tea. Kombucha is his iced tea turned sour and it's something he usually throws out. Well, not this time because I can drink it. Hehehe

I would also like to taste all those kombucha concoctions. Since mango is quite rare in our area. The most desired one for me would be with mango flavor.

I'm having fun trying out different flavors. Yes, the mango one is good! I just need to add more cut up mango next time I do it to really taste the mango. I'm not sure if orange would be good too? Hmm that's an idea...

I know it can sound strange, but I would also try green cucumber kombucha)) I saw Sprite here with taste of cucumber and watermelon, is it something special for our country or you also have such taste in this summer in US?)

I discovered mint Kombucha recently and I did like it!
Definitely something I will try with my chocolate mint leaves.

Awesome. Love how you unite the BBBU tribe here haha...!!! Maybe we need a banner... he he... and a discord channel!!! I just drank my lime jalapeno one today watered down with soda water and it was so good.

For the first time in 5 years my SCOBY got mould so I have to start another batch. I think I stupidly used it for green tea which worked great but then I transferred it back to the black tea and it wasn't happy with the transfer. Plus I didn't save some for emergencies and chucked a heap of spare SCOBY on compost. Idiot. It's okay though... I'm going to ask my mate down the road for some as I'd given her some a year ago and she now has SCOBY up to her eyeballs. Xx

Oh my, good thing you got somebody who can spare some SCOBY! Lol up to her eyeballs, my son laughed at that. Soon enough I'm going to be at that same state. Mine's already getting thick and I gave away one good chunk. Still not enough I still have plenty to give away but no one else would take it.

Mango was great too! Next time though, I have to cut up more slices. I liked eating the fermented mango slices after drinking kombucha 😀

At first, it looks like beer, I have never tried Kombucha in my life, I hope I can try it soon, I sometimes in my spare time make beer, so I'm guessing fermenting tea wouldn't be that much different.

You gave me an excellent idea, I'm going to see how is kombucha made and try to integrate that into a beer.

It does look like it! More like a pale ale? I think kombucha is easier than making beer😀so if you make beer, this should be easy peasy.

Hey there @lovenfreedom! So glad to see you experimented with your kombucha. I also love the flavor of kombucha if I add some mint leaves in the 2F. It's perfect for Summer time booch.

"Slime" is the perfect name for SCOBY. I love it!

😀It's the slime! Babies call it that and I let them touch it so yep, sliiimmmee

My mom has been making kombucha for awhile now. I think she has two or three SCOBY's. It is good stuff. Although I feel that she could add a bit more sugar to her brew.
