Garden Fresh Tomato Pasta
One of my absolute favorite, EASY dishes to make that causes my husband to drool (and make weirdly sexual sounds while he's eating) is this dish.
He FINALLY picked enough tomatoes yesterday with the grandkids that I had some left to cook with.
Super easy and delicious.
Cook the pasta whilst sauteeing everything else in Olive Oil in another pan. I start with garlic, since it takes longer. I add a little basil and oregano and some pink sea salt.
When that is almost done, I add finely chopped spinach and the tomatoes just long enough for them to get hot. The tomatoes nearly burst with flavor and it is a a WONDERFUL combination. Sprinkle some parmesan cheese on it and it is perfect!

This looks so incredibly delicious @byn. I'm all for the quick and easy. In fact the only thing I actually cook is pasta. I love how quick and easy almost every dish is to make. Will definitely be giving this one a try :)
