Loaded Veggie Sandwhich 🥙

One my my favourite ways to get in my veggies is to make a whole sandwhich packed full of them! This is filled with greens (arugula & spinach), tomato, onion, cucumber, sauerkraut, vegan kale pesto, and more. 😋 if you were looking for less calories, take the bread out of the equation and turn this into a salad! Ok yeah I’m still obsessed with salads, and I don’t think I’ll ever stop 🥗😍
