Not only is it a versatile vegetable in the kitchen, but it is also a very important vegetable for the prevention of serious diseases. Rather wonderful things, artichokes! One of our neighbors used to grow lots and lots of them... amazing to see how they are basically giant thistles when they are growing...

That's right and their flower is beautiful.

I used to prepare artichoke to lose weight .... but, then I was hungry! Hahaha.
