Medicinal Gourmet Cooking Collective, Week 1 Heart/Fire element: DELICIOUS LENTILS SOUP

Food is a healing and comfort. It sustain our body's nourishment in order to function well. There are lots of varied nutritious meal that are simple, easy to prepare, and are highly beneficial to our health.

One of the most humblest and nutritious food on earth are lentils, There are lots of types of lentils, and most of them are similar in taste and nutrition. It is high in protein and rich in fiber, which is good for lowering cholesterol and maintains heart health.

(This is my super Lentil soup)

Ingredients for my Lentil soup:

lentils (1 cup)
tomatoes (2) - chopped thinly
Moringa leaves
coriander leaves (roughly chopped)
eggplant (cut in large chunks)
turmeric powder
black pepper
salt

Methods:

  1. Soaked the lentils overnight. (the longer it soaked in the water, the quicker it cooks).

  2. Wash the lentils, and add right amount of water, about 3 cups of water.

  3. Add salt and spices of turmeric and black pepper.

  4. Put it in a medium heat and boiled.

  5. Once boiled, Simmer, and add the eggplant, tomatoes, and moringa leaves. cook for few minutes.

  6. Remove from the heat, and add the coriander leaves for a zingy flavour.

Turmeric absorption in the body increases when it combined with black pepper.

Lentils is rich in fibers and essential vitamins that help to reduce heart disease. It regulates the blood sugar for diabetics. Tomatoes which is is also rich in Lycopene, that is helpful in reducing cardiovascular diseases, It helps to reduce risk in blood clots and prevents cancer.

Moringa leaves considers as a superfoods and dubbed as the most nutritious leaves on earth, It provides almost all the essential nutritions needed for the body. Eggplant which is purple color vegetables are rich in phytonutrients like anthocyanidins. Coriander leaves that provides extra kick of the dish, contains adequate vitamins and minerals. Turmeric helps to lower cholesterol, aids digestion, and improves immunity.

We are what we eat, what we put in our body influences are over all being. A proper balanced diet is the key to reached the optimum health.

Lentils is best with rice, though i prefer to eat with my Home made chappatti.

Yes, i love adding moringa leaves to lentils, it add taste to it and is super nutritious. sometimes i add spinach too, or just any leaves available in my fridge.

Lentils is similar to green Mung beans but is just different in color sis. Similar in taste and nutrition too.

Sounds great... I love dhall and have tried soups with lentils like this before - I'll leave out the coriander though... totally not to my taste and liking! Lol...
