"Tinolang Manok," A Filipino Classic Recipe

This is one of my favorite Filipino dish. It's so simple to make but a very satiating one. In the Philippines the history of this dish goes back to our ancestors in the old age, this is very traditional. Each province in the country has their own version of course but it's pretty much similar because of the same ingredients used but they just add something different to it, like there are areas where they love spicy so they add more pepper or chillis to it.

I made this tinola for lunch earlier, I got a chicken from the grocery and have it cleaned but other Filipinos make tinola to organic and free ranged chickens that they grow at their backyard. That one is so much tasty and flavorful for some reason. I would want to have that over this but this is what's available for me, at the moment since we are in the metro. This dish is a soup, but you first saute the chicken in some spices for it to have all the flavors coming out and it would smell so great. Then you add water and bring it to a boil then later add the moringa leaves and wedges of papaya. You taste it and check if you need to put more salt and pepper then have it stay on the first for 3-5 minutes more and voila! You have a very flavorful and aromatic chicken soup called Tinolang Manok. We eat this with cooked rice and you cannot imagine how many cups of rice I had to pair with this bowl of awesome goodness.
