Recipe for simple soul-soothing Rice of Tranquility (includes oyster mushrooms, nori and sauerkraut)

Improvising simple rice-based meals with whatever ingredients I have on hand is kind-of my culinary signature. It's usually nothing very special, but this one tasted surprisingly good. A perfect balance of all the five basic tastes. And it's healthy and vegan.

Ingredients:

  • Calrose rice. It being calrose is important if you want to eat with chopsticks, which is a good part of the soul-soothing aspect of this meal (chopsticks forces you to eat more slowly and thus appreciate the meal more profundly).
  • Miso
  • Dried oyster (pleurotus) or shiitake mushrooms (it's better if they are dried! When cooking along the rice, they'll transmit their flavours better than if fresh mushrooms are used).
  • Nori, or other algae (wakame would be nice)
  • Sesame oil
  • Soy sauce (an asian brand, the regular superbarket brands ie. VH taste like salty coca-cola tar)
  • Rice vinegar.
  • (Optional) sesame seeds.

Instructions

Cook the rice in the same water as the dried mushrooms (again, quantity is adjusted to your taste). In a cauldron, use twice the volume of water than rice, bring to a boil, and simmer for ~20 minutes, or until all the water is absorbed.

Add sesame oil, soy sauce, and rice vinegar (your taste defines the quantity, used about a tablespoon of each for 4 portions). Stir.

(Optional) add sesame seeds.

Crumble nori sheet(s) over it, and add miso (a good tablespoon or two for maximum umami). Stir.

Garnish with sauerkraut, homemade if possible (will add a recipe for that soon! it's easy and awesome [supermarlet sauerkraut is not sauerkraut but vinegar-soaked cabbage]). Kimchi would work well also, or other kinds of fermented/pickled vegetable.

Whenever funds run low I tend to reduce diet to rice and veggies, and I agree: It tastes really good, the variety of rice dishes. Now this one looks absolutely incredible dude!!!

Agreed, a life of minimalism in material has really freed me in many ways. I do welcome abundance into my life but it's comforting knowing that I can survive with little and yet have a smile.

Not so fond of Sauerkraut but I haven't tried it in forever either, this dish seems like the perfect opportunity ;)
