A large tuna from palawan

Today I want to share this photo. A photo of big tuna we buy from palawan .The weight of this tuna is" 77kilos".
The past few days tuna is difficult to buy at subicfishport because of the bad weather and also because of full moon. So our boss decide to contact a dealer of tuna in other part of Philippine. It's so lucky they got a contact from palawan. They got a deal and my boss order a tuna yesterday and now the tuna was already her at restaurant. It's very effortless for us because we don't need to go at fishport and wait until late night to by a tuna. Now all we need to do wait and be ready until the deliver..

Head is my favorite parts of fish.
And this is the photos of the body and meat of the tuna. 
The photo of our Korean chef he is our sushi master and he is the response for butchering tuna...
