Tofu & Vegetables Risotto - Recipe #2

Hi, everyone! Since a lot of you enjoyed our first recipe on Steemit here is another one tonight!

INGREDIENTS:

200g tofu
200g rice
100g sweetcorn
1 bell pepper
1 courgette
1 red onion
4 tbsp olive oil
1 tsp of sweet paprika
1 tsp of all purpose seasoning (Vegeta)
a pinch of dried garlic
a pinch of ground black pepper
a pinch of salt

PREPARATION TIME:

25 minutes

COOKING TIME:

25 minutes

SERVES:

For this recipe, you will start with opening up a packet of tofu and leaving it on a sheet of a kitchen towel so it dries itself for about 10 minutes. Meanwhile, you will prepare a pot for rice - fill it with water and add a pinch of salt (table salt or Himalayan salt, whatever you prefer). Don't start boiling the rice just yet.

First, make the marinade for the tofu. As shown in the photo, you will use olive oil, just like in the previous recipe.

Add 4 tablespoons of olive oil, 1 teaspoon of all purpose seasoning...

...and 1 teaspoon of sweet paprika into the medium size bowl.

Mix it all together so it blends and creates the marinade. Now, slice the tofu into smaller pieces.

The sharper your knife is the neater will everything look and you're going to need less time.

The size of the pieces in the photo is our choice, you can adjust the size to any size you prefer.

So, this is how the marinade looks like with the tofu inside. Leave it like that for approx. 10-15 minutes so the tofu can soak up all the juice, it's going to be tastier when cooked.

Now, this is the photo with the vegetables used. One of each will suffice. After it is sliced and/or diced it is supposed to look something like this.

Remember that rice from the very beginning? Now it's time to bring it to boil. Add the rice into the pot that contains lightly salted water. Turn the heat on.

After that, bring the wok pan with oil inside to a medium temperature. Add the marinated tofu and cook it for about 10 minutes, stirring occasionally. When the tofu is done (you will see the change in color) add the vegetables - onion, bell pepper, courgette and sweetcorn. Stir it up occasionally until it's all cooked well, drain the rice, add it to the pan and repeat the stirring. It should all take around 10 minutes. This is how the whole mixture should look like when it's done.

Now, you are done with the preparation and with the cooking - all you need to do now is invite others to join you at the table and serve the meal.

Voilà! Your meal is served and ready to eat.

If you stayed with us throughout the whole recipe, we will give you a couple of tips to make this meal even better:

  1. While cooking everything together in a wok pan, add sesame seeds. They contain all kinds of benefits and taste good!
  2. You can serve any drink you want with it, but I would suggest fresh cold water with a bit of squeezed lemon juice. Really refreshing and beneficial, especially during summer.
  3. If you like eating them, you can add sliced tomatoes to your served lunch. They blend well with this food and will keep you full for a longer period of time, especially if you are used to a high-calorie intake.
