Okay, if you put my feet to the fire for an answer, I'd say the more coffee there "churchgoers" drink, the faster their hearts beat; the faster their hearts beat, the harder they'll pray; the harder they pray, the more likely it is they'll get God's attention; when they get Gods attention they can all ask her to protect us.
I'm sure she'll protect us all if a bunch of coffee crazed holy rollers ask her. Hallelujah!

Hmmm, well then... He drinks the coffee and then evaluate the quality and efficiency of said coffee to determine which ones actually help us, which ones just cause imbalance of caffeine within the body, etc? lol I don't drink coffee. Maybe he drinks it so that I don't have to.

My guess when I came across the sign was that due to so many bad things happening at any given time, the coffee allows for late night security sessions ;)
Then I watched ID channel and a detective said "Nothing good happens after midnight," so... coffee to stay up for the late night bad things? lol
The way I see it is, if you need coffee to begin with, you'Re not doing it right. Your body gets used to it. If you have enough sleep and respect your own rhythm (mine's 4 AM to noon normally) then you shouldn't need coffee. Of course, I have panic reactions to caffeine and most people with anxiety should not be drinking it. Granted though, I can nap whenever I need to and sleep how long or short a time I want or need given I make my own schedule and routine. But if you NEED coffee ALL THE TIME, I think you need to stop coffee.
