Food Photo Shoot- Spice Things Up With This Tasty Chicken and You Won't Worry About Leftovers

If you have a picky eater in your family like I do you have to be a little creative when it comes to leftovers and meal planning. I decided to spice things up with this Awesome Spicy chicken with rice recipe, it just doesn't taste the same unless it is made with leftovers.

Awesome Spicy BBQ Chicken with Long Grain and Wild Rice

Ingredients:

Leftover chicken cut into pieces (I used leftover chicken so your amount will vary)

  • 3 cups Long grain and wild rice
  • 2 cup BBQ sauce
  • 2 tsp. Soy sauce
  • 3 tsp. Hot sauce
  • 2 tsp. Worcestershire sauce
  • 2 tsp. Oregano
  • Mrs. Dash seasoning- add according to your taste (I use the salt-free garlic blend)
  • 1/4 cup honey
  • 1 cup of fresh chives for garnish
  • 1 pack of crackers for sides

You may need to adjust the amounts needed for your recipe depending on the amount of leftover chicken you have and how many guests you will be feeding.

First- Simmer your chicken in a skillet with olive oil and oregano for 5 mins. while you are getting your sauces prepared.

In a bowl mix all of the sauces and adjust according to your taste

Add the Mrs. Dash (or whatever you prefer to season with)

Add the honey, while mixing thoroughly

Once all of your sauces, honey, and seasonings are mixed well, remove chicken from the skillet and set aside.

Add the chicken from the skillet into a mixing bowl

Add your sauces mixture to your chicken and pour into a baking dish

Set your oven to 300 degrees and bake for 30 minutes

While your chicken is baking prepare your long grain and wild rice as directed by your rice packaging

When the rice and chicken are ready, prepare by adding rice to the dinner plates and topping with the chicken

Sprinkle with fresh chives and garnish with crackers
