Braised Tofu

Hello everyone, I am Lu, here is the Chinese fashion food section. Today I share with you a traditional Chinese home cooking:Braised Tofu.

Braised tofu is the main raw material of tofu,The existence of tofu has a long history. According to legend, it was invented in 164 BC by the grandson of Chinese Han Gaozu (Liu Bang): Huainan Wang (Liu An).

Tofu is highly nutritious and contains iron, magnesium, potassium, niacin, copper, calcium, zinc, phosphorus, folic acid, vitamin B1, egg yolk and vitamin B6.

Each 100 grams of tofu, moisture accounted for 69.8%, containing 15.7 grams of protein, 8.6 grams of fat, 4.3 grams of carbohydrates and 0.1 grams of fiber, can provide 611.2 kilojoules of heat.

78% of tofu fat is unsaturated fatty acid and does not contain cholesterol. It is known as the “plant meat”.

The digestion and absorption rate of tofu is over 95%. Two small pieces of tofu can meet the daily calcium requirement of one person; please refer to the production method.

Ingredients that need to be prepared:

1: tofu (200-250 g); 2: shallot (1 g); 3: garlic (1 g); 4: red oil chili sauce (5-8 g); 5: green pepper (8 g); Black fungus (10 g); 7: salt (2 g); 8: white sugar (1-2 g); 9: oyster sauce (4 g); 10: soy sauce (2 g); 11: corn starch (1 g) 12: sesame oil (0.5 g); 13: vegetable oil (35--50 g).

Step:

1: Cut the green pepper and tofu into small pieces with a knife (please refer to the picture or video);

2: Chop a shallot and garlic with a knife;

3: Put the oyster sauce, water, soy sauce, sugar and salt together in a bowl and mix well, waiting for use;

4: Pour the vegetable oil into the pot and heat it up to 40%, then add the tofu to fry, wait until the top and bottom of the tofu become golden yellow, then remove and wait for use;

5: Pour some vegetable oil into the pot and heat it up to 30%, then add shallot, garlic, red pepper sauce, prepared sauce and fried tofu, stir fry for 2 minutes on medium heat;

6: Then pour in green pepper, black fungus, corn starch juice and sesame oil, stir fry for 3 minutes and finish;

7: The effect after completion;

Matters needing attention: 

1: Tofu should not be cut too thick, otherwise it is not easy to fry (please refer to step 1);

2: For the preparation of sauce, please refer to step 3;

3: When frying tofu, be sure to use medium and small fire, both sides should be fried Fried into golden yellow; 

4: How much can be placed in the seasoning can be put according to your preference, the list is for reference only.
