Hell's Kitchen: I Wasn't Ready For Indian Curry
So I didn't end up taking pictures or measurements because I figured I'd have thought of something else to write about by this time, but no go. So this might be a bit of a clunky estimated recipe guide of a simple Indian Curry recipe. Being my first time making curry...it started off pretty hectic since I had the bright idea to start cooking the seeds before I had anything chopped.

So first I started heating the vegetable oil while I got out a bag of peppercorn, coriander, and other seeds, hammered them down a little and threw them in the pot. That was when I realised I didn't cut anything yet. I had to cut the onion, 4 garlic cloves and an inch long ginger root which needed to be shaved. Thankfully, the seeds didn't start popping while I was doing this. I threw in the half white onion I had chopped up and started up some pinto beans to boil while they were cooking in the pot then threw in the ginger and garlic. Again, a hectic mess...the pinto beans were to be the main part of the dish since I'm trying to stay away from meat.

(Thankfully they weren't in the end...) So while the ginger and garlic were cooking I also cut up a potato and carrot to throw in later on. I added some cumin, curry powder, basil, oregano, thyme, and black pepper, as well as 2 serrano peppers and 4 small dried chili peppers since I'm a spice whore. I also chopped up some spinach to help thicken it later. I then poured in some water and a teaspoon of milk since we didn't have coconut milk, as well as a little bit of flour, the pinto beans, potato, and carrot and let the dish simmer for about 40 minutes. I also decided to start some rice at this point and leave the house for about 10 minutes almost burning it because I make poor life choices and decided to start this entire dish without checking to see if we had paprika and turmeric....

So, thankfully everything came out pretty good in the end and not really bad for my first unprepared dish of curry. Probably too spicy for some people, but I'm not happy with spicy food unless I'm crying. The amount of other spices weren't over powered either so that's a plus! If you plan to make this, don't do what I did and make sure you have everything you need first...
