Nyala's Ethiopian Recipes #89

Nyala's Healthy Beans

INGREDIENTS:

one lb fresh green beans
half teaspoon salt
two tablespoons olive oil
one tablespoon lemon juice
half teaspoon salt
half teaspoon pepper
one garlic clove
quarter cup sweet white onion
three tablespoons sliced green olives
half tablespoon hot pepper flakes

INSTRUCTIONS:

Slice the ends off the beans, and quickly cook the beans in a large sized pot of boiling water and cook for five minutes.

Eliminate and add in cold water for five minutes to crisp. Strain.

Stir oil, lemon juice, garlic, salt, and pepper. Blend evenly.

Put the onions, green olives, and cool beans and add till coated, put hot pepper flakes if using. Set your salad out now, or keep it in fridge as long as you want to.
