Mochi

Ingredients

three and half cups sweet rice flour
two and half cups white sugar
two tablespoons baking powder
five eggs
one teaspoon coconut extract
one teaspoon vanilla extract
two cups milk
one (fourteen ounce) can coconut milk
half cup melted butter

Instructions:

Preheat an oven to 350 degrees F (175 degrees C). Beat the rice flour, sugar, and baking powder together in a blending bowl.

Whip the eggs, coconut extract, and vanilla extract in a blending bowl till the eggs are smooth. Beat in the milk, coconut milk, and melted butter till incorporated. Mix in the flour mixture a little at a time till no lumps remain; scrape into the prepared baking dish, and smooth the top.

Bake in the preheated oven till the mochi is golden brown, about one hour. Cool to room temperature before slicing into twenty-four pieces to serve.
