Crockpot Polish Sausage Stew
For those who still have their crockpots after the This Is Us fiasco, here is a simple, yet delicious recipe that I highly recommend you try!
Ingredients
Main Ingredients
5 medium red potatoes
1 medium onion (I used half a large)
1 red bell pepper
1 green bell pepper
3 ribs celery
3 medium carrots
1 pack of polish sausage
4 tablespoons olive oil ( highly recommend using Thrive Algae Oil)
1/4 cup of fresh basil (Can Substitute this with dried basil, roughly 2 tablespoons)
1 teaspoon salt
1 teaspoon freshly ground black pepper
1/2 teaspoon garlic powder
1 can cream of potato
Finishing Touches
1/4 cup milk
1/8 cup melted butter
4 tablespoons cornstarch
4 tablespoons water
- Combine the minced basil, cubed potatoes, chopped onion, red and green bell pepper, celery, carrots, and sausage in the crockpot.
- In a separate bowl, combine garlic powder, olive oil, salt, and pepper. Along with the cream of potato, mix this into the crockpot and stir to coat evenly.
- Cover and cook on LOW for 6 hours. if you are in a time crunch, you can also cook on HIGH for 2.5 to 3 hours.
- Towards the end, combine the cornstarch and water then whisking until smooth. Along with the milk and butter, stir into the stew.
- Cover and cook for an additional 10 minutes to thicken the soup.
- Enjoy!
Tips
- Use a crockpot liner to cut back on the mess!
- Enjoy this with some form of carbs. I love eating this with a slice of bread or saltine crackers.
- As with all recipes, adjust to your preference!
