Pineapple cake
Let´s prepare this delicious cake at my style. I prepare it by hand, using a wooden spoon and I prepare my own pineapple slices, this time I don´t have cherries to put in the pineapples, I didn´t find in the food shops.
Ingredients
1 pineapple cut in slices and take the centre out, reserve 4 o 5 slices for the cake tray
500 grms of sugar
500 grms of flour 000
250 grams of butter
5 eggs
1 cup of additional sugar
2 tablespoon of baking powder
1/2 teaspoon of baking soda
5 drops of tangerine essence
1 lemon rind
1 glass of pineapple juice
3 slices of pineapple cut in pieces and put flour on them, mix and reserve
4 tablespoon of milk
Preparation
peel the pineapples and cut in slices, take the centre out, reserve
cook 3 slices in 4 cups of water and in order to kill the acidity add 4 tablespoon of sugar
cook till you have 1 glass of juice plus 1 cup of juice to prepare the sirop, reserve the 3 slices
In the cake tray put the cup of juice and add 1 cup of sugar, when the sirop is ready add 1 tablespoon of butter
place the pineapple slices with the cherries in the centre
Done this, let´s start making the cake
Put the butter and the sugar in a bowl mix well, then add the eggs one by one
Now you put the flour, the essence, the lemon rind, the milk, and the baking powders
mix well adding the pineapple juice slowly
- add the reserved pineapple cut in pieces and mix slowly
- Put the cake mixture over the cake tray with the slices of pineapple and bake
- When the cake is ready you have to put it in the tray inmediately, because the pineapples slices can stick on the tray if this occur don´t worry, you can lift them with a spoon and place where they left the mark.
When this occur, it is because you didn´t prepare enough sirop
