Oatmeal Bread
Ingredients
two cups all-purpose flour
one teaspoon baking soda
one teaspoon baking powder
half teaspoon salt
three very ripe bananas
quarter cup packed brown sugar
one large egg
three tablespoons vegetable oil
one tablespoon grated orange zest
one cup chopped walnuts
quarter cup semisweet chocolate chips
half cup rolled oats
Instructions:
In a large sized dish, using an electric mixer on medium speed, whip together bananas, sugar, egg, oil, orange zest and half cup water till thoroughly mixed, about three minutes. Lessen mixer speed to low and put flour mixture in two batches, whipping after each addition till just mixed. Scrape down sides of bowl.
Blend in walnuts, chocolate chips and oats. Fill batter into loaf pan and bake till bread is golden brown and a skewer inserted into center comes out clean, about one hour. Cool loaf in pan on a wire rack for ten minutes, then eliminate from pan and let cool completely.
