Korean Vegetarian Japchae(stir-fried glass noodles) / 채소가 듬뿍들어간 잡채만들기


Japchae is a Korean traditional food that we enjoy on special days such as birthdays, wedding receptions, etc. People usually add beef or pork but I wanted to make it healthier so I skipped the meat this time :) Let's get started!

Vegetarian Japchae
ingredients:
for noodles

• 1,500cc of water
• 400g of Korean glass noodles(Dang-myeon)
• 2Tbs of soy sauce
• 3Tbs of sugar
• 1Tbs of chopped garlic
• 2Tbs of olive oil
• 2Tbs of sesame oil

• 1 large onion
• 2-4(depends on the size) pieces of shiitake mushrooms
• 1 red bell pepper
• 1 yellow bell pepper
• 1 green bell pepper
• 1 medium carrot
• 4Tbs of soy sauce
• 1Tbs of sugar
• sesame seed 1Tbs

Course:

1. Add 1.5L of water in the pot, and bring it to boil. Add 3 tablespoons of soy sauce, 2 tablespoons of black or brown sugar (Using dark colored sugar for color but regular sugar is also ok), 1 tablespoon of chopped garlic, 2 tablespoons of cooking oil(I used olive oil) with 400g glass noodles(serves 6 people) in the water and boil it for 9 minutes.

2. After draining the water put the noodles in a bowl. Add 2 tablespoons of sesame oil and mix with noodles quickly. (So noodles don’t stick together)

3. Add cooking oil to the pan and stir-fry vegetables lightest color to darkest color. Stir-fry onion, shiitake mushrooms, 3 different kind of bell pepper, carrots in order separately. You don’t have to cook too much, just stir-fry them slightly with a pinch of salt. Move to plates and let cool.

4. Add all the ingredients in a bowl and mix together with 4 tablespoons of soy sauce and 1 tablespoon of sugar.

5. Sprinkle sesame seed on top before serving.


잡채는 각종 잔칫상에 빼놓을 수 없는 음식이죠. 그렇기 때문에 화려하게 만드는게 포인트랍니다. 원래 잡채에는 소고기나 돼지고기가 들어가지만 저는 더욱 건강하게 먹기 위해서 고기를 넣지 않고 만들었어요 :) 그럼 시작해볼까요?

채소가 듬뿍 들어간 잡채 만들기
재료:
당면삶기

• 물 1,500cc
• 당면 400g
• 간장 2Tbs
• 설탕 3Tbs
• 다진 마늘 1Tbs
• 올리브오일 2Tbs
• 참기름 2Tbs

• 큰 양파 1개
• 표고버섯 2-4(크기에따라)개
• 빨간 파프리카 1개
• 노란 파프리카 1개
• 초록색 피망 1개
• 중간사이즈 당근 1개
• 간장 4Tbs
• 설탕 1Tbs
• 깨 1Tbs

Course:

1. 냄비에 1.5L 물을 붓고 끓여줍니다. 이때 간장 3큰술, 흑 혹은 황설탕 2큰술, 다진마늘 1큰술, 올리브오일(혹은 식용유) 2큰술과 당면 400g을 넣고 9분간 삶아줍니다.

2. 9분 후 당면이 잘 익었는지 맛을 본 후 채반에 받쳐 물기를 빼줍니다. 볼에 옮겨담고 참기름 2큰술을 넣고 재빨리 섞어줍니다.(그래야 당면끼리 달라붙지 않아요)

3. 이제 채썰은 야채들을 볶아줄건데요, 옅은색깔의 채소부터 진한 색깔의 채소순으로 볶아줍니다. 양파, 표고버섯, 파프리카, 당근순으로 볶아주시면 됩니다 :) 약간의 식용유와 소금한꼬집씩을 넣고 볶아줍니다. 너무 많이 볶지 않아도 되요. 살짝 부드러워질 정도로 볶았으면 그릇에 옮겨담아 식혀줍니다.

4. 이제 당면과 채소들을 섞어줄게요. 볼에 한꺼번에 넣고 간장 4큰술, 설탕 1큰술을 넣고 같이 섞어줍니다.

5. 마지막으로 참깨를 뿌려주면 완성입니다 :)

I don’t know if I can find ramen here but we have spaghetti...

I read some where that if you put baking soda in spaghetti, it’ll have the taste of ramen. Is it true?
