Spicy Black Bean Tostadas With Corn Salsa And Avocado

This easy Mexican recipe is a terrific desire for parties, as it’s clean to make, filling and refreshing.

Ingredients:

Four small corn tortillas
1 ripe avocado, peeled and reduce into slices
1 can be cooked black beans, rinsed
½ tsp cumin
2 garlic cloves, beaten
½ tsp red chili flakes
1 tbsp lemon juice
1 tsp coconut oil
Pinch sea salt
the corn salsa
2 corn cobs
1 ripe tomato, finely diced
1 small onion, finely diced
2 limes, juice handiest
½ bunch sparkling parsley, kind of chopped
Pinch sea salt
1 tsp greater virgin olive oil
To garnish: green warm pepper slices, sparkling parsley leaves

Instructions:

  1. Grill the corn cobs then dispose of the kernels and vicinity in a medium bowl.

  2. Grill the tortillas till crisp, then set apart.

  3. Upload the tomato, onion and sparkling parsley, and toss to combine.

  4. Drizzle with olive oil, add the lime juice, season with salt and mix to combine. Set apart to permit the flavors to mix.

  5. In a medium saucepan warmth the coconut oil over low heat. Upload the garlic and fry for 30 seconds.

  6. Add the black beans, purple chili flakes, cumin and lemon juice, mix to mix and cook dinner for 5 mins over low heat.

  7. To bring together the tostadas, divide lightly the corn salsa and black beans onto grilled tortillas, pinnacle with avocado slices, garnish with fresh parsley and green pepper slices and serve heat.
