Quick Homemade Falafel, Hummus & Salad - The Best Vegan Falafels I've Ever Eaten :)

Falafel and hummus is easily one of my favourite foods for dinner or lunch - I love the way the flavours come together and provide a great mix and balance of different experiences. Plus, it's not a heavy meal at all. I have finally taken the time to make just about all of this dish (except the pitta breads).. Enjoy!

Serves: 2

Over the years I have tried a wide variety of falafel dishes - from supermarkets, to street vendors to other people's home cooking... I always feel that the home cooked ones turn out best, with the street vendor and restaurant/cafes coming second... Supermarket varieties are nearly always pretty terrible, totally lacking the necessary flavour explosions and texture. This recipe comes very close to the type I have made at home previously using ready to go falafel kits, but this time I've used all organic ingredients and fresh herbs - which totally blew me away. I am looking forward to eating the rest of them tomorrow :)

Ingredients

Falafel


1 small onion
400g of rinsed, soaked chickpeas
7g of fresh coriander
7g of fresh parsley
50g of Chickpea flour
3/4 Tablespoon of Harissa paste
1 teaspoon of pink himalayan salt
1/2 teaspoon of cumin
1/4 teaspoon of black pepper
1/4 of a lemon - juiced
garlic infused olive oil or other oil

Hummus


200g of rinsed, soaked chickpeas
2 tablespoons of tahini
1 tablespoon of garlic infused olive oil
1/4 teaspoon of cumin
1.4 teaspoon of pink himalayan salt
water
1/8 of a lemon - juiced

Salad


Mixed lettuce leaves - washed and drained
Skinned cucumber - sliced and halved
Cherry tomatoes - quartered
Pine nuts
(Quantities as you prefer)

Method



Falafel


  1. Chop the onion finely.

  2. If you don't have Chickpea flour you can drop some dried chickpeas in a high powered blender until they are turned to flower - I did this.

  3. Drop the onion, herbs, spices, salt, chickpeas and chickpea flour (gram flour) into a high speed blender and blend until powdery. Don't add the oil yet.

  4. Add the lemon juice to the blended mix and blend a bit more

  5. Take out small amounts of the mixture with wettened hands and roll them into balls, whichever size you prefer (usually about 3-4cm across).

  1. Put some oil in a medium/hot frying pan and lightly fry the balls on all sides for a few minutes until brown.
  2. They are done!

Hummus


  1. Drop all the ingredients into a blender on high speed and keep going until the mix is smooth and paste like.
  2. Adjust the mix to taste.

Salad


  1. Chop the salad, cucumber and tomatoes into appropriate sizes - to your preference.
  2. lightly toast the pine nuts in a frying pan - with or without oil.
  3. Serve in a bowl, with oil and salt/pepper if you prefer (I usually avoid oil and salt on salads for health reasons).

You are done!

I added in a couple of toasted pitta breads for the final effect and an awesome dinner!

Falafels are the best especially if you have some pickled veggies and some really garlicky yoghurt as well. I think I might make these or dinner thanks for the reminder xx
